近年的研究發現,蝦紅素(astaxanthin)為具有強抗氧化能力之類胡蘿蔔素之一,且對生物體具有各種不同的助益,如:對抗體內自由基及活性氧物種(reactive oxygen species, ROS)、抗化學性腫瘤、預防心血管疾病及免疫調節等。最新的研究顯示,蝦紅素可幫助小鼠於運動中提升脂質氧化代謝率,節省肝醣消耗,延長耐力運動的表現,亦有研究顯示,經由蝦紅素的補充可以提升脂肪酸轉位酶/CD36(fatty acidtranslocase/CD36, FAT/CD36)的表現量,避免運動中粒線體膜上的肉鹼棕櫚醯轉移酶I(carnitine parmitoyltransferase I, CPT I)遭到氧化傷害,進而提升脂質的氧化代謝,達到延長耐力運動表現之效果。或許蝦紅素可運用於運動員,成為有助益之營養增補劑。
