澎湖科技大學餐旅管理系由於地處離島偏遠地區,因此學生至校外實習制度,與一般學校的6~12個月至校外實習不同。本校學生利用大三暑假二個月時間,分佈至全省餐旅單位全時間實習,教師訪視期間只有一次。然而,如此建教合作之教學效能爲何?學生對此種業界學習的感受爲何?學生遠離學校與家庭在生活適應方面是否產生問題?以上種種,實難以得知,本研究以內容分析法,對學生的實習日誌內容進行研究與分析,並輔以業者與訪視教師之訪談。本研究結果發現餐旅學生校外實習所遭遇的適應問題,分別爲「工作適應」、「情緒適應」、「人際適應」與「生活環境適應」等。其中學生產生的適應問題以「工作適應」和「情緒適應」比例最高。影響學生校外實習之學習成效的因素包括「實習單位的特質」、「實習前的準備」、「實習環境」、「實習工作內容」、「實習教師」、「學生本身」與「社會支持」。而「實習前的準備」與「社會支持」影響學生學習成效的比例最多。最後根據研究重要結果,提供業界、學校、學生及其他相關單位若干建議,以利相關教育合作單位參考與改善。

英文摘要

Due to geographical factors, internship systems provided to students of National Penghu University (NPU) Department of Hospitality Management differ from other typical schools. The average school offers external programs that range from 6 to 12 months but NPU students spend 3 months in the summer vacation prior to their senior year to participate in full-time hospitality positions across Taiwan. Moreover, teachers only conduct one inspection visit to the internship organization. What are the efficacies of such a school-business collaboration? What is the students' perception of such an internship? Are there problems with accommodation since students are working far away from their schools and families? The answers to the above questions are unknown. Therefore, this research adopt a content analysis of the aforementioned issues focusing on the reflective daily journals that students keep on their internship experience, and interviewed with industry and internship teacher. Content analysis revealed the following findings: the accommodation problems experienced by interns consist of ”job”, ”emotion”, interpersonal” and ”living circumstance” factors. The most frequent are ”job” and ”emotion” factors. The factors influencing students' accommodation and learning results are ”characteristics of the organization”,, ”preparation prior to internships”, ”internship context”, ”internship job contents”, ”internship teacher”, ”the student” and ”social support” The most frequent are ”preparation prior to internships” and ”social support”. The important results deduced from these data can be used as a basis of recommendation for the industry, schools, students. It can also act as a reference for educational collaboration units when considering improvement avenues.
