癌症及心血管疾病己連續好幾年名列國人十大死因內,因此如何預防及降低罹患癌症及心血管疾病的風險,已是非常迫切與近身的問題。人體代謝食物產生能量的同時,大量的自由基會伴隨產生,體內雖有去除自由基的機制,但往往無法讓生成與去除達到平衡,而會有多餘自由基殘存下來,因自由基具有極強的氧化能力,會破壞細胞組織,進而造成癌症及心血管疾病。抗氧化劑因具有抗氧化能力,可有效去除自由基,進而達到預防或降低罹患癌症及心血管疾病的風險。綠茶中之兒茶素類具有抗氧化能力,已被視為是一種抗氧化劑,經由動物實驗證明,它可抑制各種癌細胞的生長、增加抗氧化酵素的活性、間接保護低密度脂蛋白不被氧化、可減少對三酸甘油酯及膽固醇的吸收並降低其在血漿中之濃度、可減低血清中葡萄糖的濃度、可回復腎臟中thromboxane A2 及prostacyclin I2的原來正常比例,進而降低血栓形成的機率。兒茶素類對人體的影響之相關研究較不多見,但從一些流行病墨的調查顯示,多喝綠茶是可降低罹患各種癌症的風險。
