本研究目的是要藉由業界主廚及西餐廚藝畢業生填答「西餐廚藝學生受雇能力調查」問卷,來找出臺灣西餐廚藝科系畢業生所應具備的受雇能力。結果顯示業界西餐主廚和西餐廚藝科系的畢業學生,都給予受雇能力相當高且一致的評分。在7分的李克氏量表中(1代表非常的不重要;7代表非常的重要),西餐主廚評定受雇能力的重要性從5.89到6.20;而西餐廚藝科系畢業學生評定其重要性從5.69到6.16。這意味業界主廚和西餐廚藝的畢業生,都認爲受雇能力對西餐廚藝學生未來職業生涯的成功有著相當重要的影響。而受雇能力中,有關人際關系的能力最爲重要,其次是自我管理和個人特質。就受訪者的個人屬性來看,其對受雇能力的觀感認知上,也有著一定的影響。本研究的結果有助於在規劃西餐廚藝課程時,能相輔相成的把相關的通識課程也一併設計規劃進來。

英文摘要

This study is designed to identify, with the help of industry professionals and students, the required employability skills for the Western culinary arts graduates to be successful in the industry. The results indicated that both chefs and students rate the employability skills high and consistent, ranging from 5.89 to 6.20 for chefs and 5.69 to 6.16 for students on the 7-point Likert-type scale, anchored by extremely unimportant (1) and extremely important (7). This suggests that the employability skills are considered by both industry professionals and the students to have great influences on Western culinary students' career success in the foodservice industry. Among these employability skills, people-related skills are rated to be the highest, followed by the personal skills and attributes. The demographic factors of both industry professionals and students have some influences on their perceptions of the importance of employability skills. Since the employability skills had been found to be critical toward students' career success in industry, Western culinary-related departments had to integrate them into their curriculum.
