本文的目的是在說明與展現餐旅課程運用角色扮演教學方法,提高餐旅學生學習的熱忱及學習的動機。分析了解餐旅學生的學習風格,運用角色扮演模式教學與透過階段的實行,發展出建立在學生學習型態偏好的教學模式是本文主要的內容。本研究採質性研究中的文件分析法與參與觀察法,作爲研究資料收集與分析的方法,透過宴會管理不同階段的課程規劃與實踐,將結果呈現並提供餐旅教育者參考。

This paper focuses on the application of role-playing as a useful technique to facilitate learning and teaching in hospitality practical courses. The purpose of this article is to investigate the development of role-playing as a teaching technique, to present a detailed record of its practical implementation to ”Catering Management” course, and to evaluate its benefits and limitations emerging from this practice. The study is based on qualitative research. Observation and content analysis have been used in this research. Different stage is designed to gain an insight into each student's attitude and learning motivation about this class and the viewpoints and problems which students wish to express through oral reports. Role-playing provides an opportunity for active participation in specific roles, allowing the topic of function to develop in an unrestricted atmosphere. It provides the excellent integration of theoretical study and facilitates the communication and application of knowledge in live function. The most significant outcome of this model is able to increase the enthusiasm and the motivation for learning.
