由於國內目前少有針對女排選手飲食攝取狀況之相關研究,本研究主要藉由飲食評估工具了解大專優秀女排選手的飲食型態及營養攝取狀況,同時提出改善策略。分別利用24小時飲食回憶及3日飲食記錄問卷,收集17位大專優秀女性排球選手各3天(2天平日、1天假日)整日飲食內容。結果發現參與者平均年齡為20.4 ± 1.7歲,身高169.7 ± 5.2公分,體重63.5 ± 7.1公斤,BMI 22.0 ± 1.9公斤/公尺^2,體脂肪25.6 ± 5.9%。平均熱量攝取為1,838.1 ± 417.0大卡,三大營養素攝取蛋白質為62.5 ± 13.5克(14%)、脂質70.4 ± 19.2克(34%)、碳水化合物236.4 ± 57.4克(52%);參與者每公斤體重平均熱量攝取為29.1 ± 6.4(14~40)大卡、每公斤體重平均蛋白質攝取為1.0 ± 0.3(0.4~1.3)克。依餐次分析發現熱量攝取集中於晚餐,佔全天44%,其中僅35%練習天數有攝取午點。結果顯示大專優秀女排選手除營養攝取未達建議標準外,其生活作息受訓練時間影響,飲食攝取亦未配合生活作息,且飲食更需個別化設計及監督,未來應對運動員本身及整體訓練體系人員進一步進行營養教育。

英文摘要

There is little research about the dietary intake of female volleyball players in Taiwan. The purpose of this study was to examine the dietary and nutrient intakes of elite college female volleyball players by using dietary assessment tool, and to development strategies for improvement. A total of 17 elite college female volleyball players were recruited in this study. Their dietary content was collected for three days (two days during the weekdays and one day during the weekend) using 24-hour dietary recall and 3-day dietary records questionnaire, respectively. The 17 female volleyball players were 20.4 ± 1.7 years old, 169.7 ± 5.2 cm in height, 63.5 ± 7.1 kg in weight, 22.0 ± 1.9 kg/m2 in BMI, and 26% in body fat. The means of energy intake were 1,838 ± 417.0 Kcal, and the intake of energy was 62.5 ± 13.5 g (14%) of protein, 70.4 ± 19.2 g (34%) of fat, and 236.4 ± 57.4 g (52%) of carbohydrate. The mean energy intake per kilogram of body weight was 29.1 ± 6.4 (14~40) Kcal/bodyweight, and the mean protein intake per kilogram of body weight was 1.0 ± 0.3 (0.4~1.3) g/bodyweight. The result from the analysis of mealtime pattern showed that most energy intake was consumed at dinner (44%). Afternoon snack was included in only 35% of the training days. The study result has shown that the dietary intake of elite college female volleyball players was less than the recommended nutrition standard. Their daily schedule was influenced by the training schedule, while their dietary intake did not follow their daily schedule. In addition, it was needed for further individualized diet design and supervision. In the future, advanced nutrition education should be conducted targeting athletes and the training staff.
