水產罐頭食品產業屬於水產加工食品業,應符合食品良好衛生規範準則(GHP)及食品安全管制系統準則(HACCP)之規定,並取得食品衛生安全管理系統驗證(第二級品管驗證)。本研究針對108-111年水產罐頭食品產業之驗證缺失進行統計,以瞭解此產業常見之稽核缺失。結果顯示,「危害之防治措施」、「危害之鑑別」、「監測內容與現場實際狀況不相符」及「未執行內部稽核」等為常見的HACCP缺失,「衛生管理」、「製程及品質管制」、「檢驗與量測管制」及「倉儲管制」等為常見的GHP缺失。此結果可提供政府及業者參考,並期藉由第二級品管驗證制度,協助業者廠區系統性管理,使整體食品衛生安全更加精進。 |
英文摘要 |
Canned fish manufacture belongs to the fisheries processing industry and should comply with the provisions of the Good Hygiene Practice (GHP), Hazard Analysis and Critical Control Points (HACCP), and required to be certified with food sanitation and safety management systems (second tier quality control). This study analyzed the audit reports of second tier quality control in the Canned fish manufactures between 2019 and 2022 to better understand the common audit deficiencies. The results showed that "hazard prevention measures", "hazard identification", "monitoring content did not match the actual situation on site", and "internal audits were not implemented" were common HACCP deficiencies. In terms of GHP, "hygienic management", "process and quality control", "inspection and measurement control" and "warehousing control" were the most common GHP deficiencies. These results provided references for the government and the fisheries processing industry as directions for continually improvements. The certification system also offered advanced problem-finding for factories and improved system in overall food hygiene and safety. |
