餐飲連鎖產業經營策略之探析－以老四川巴蜀麻辣燙為例

因國人消費能力的提升以及生活型態的改變，因此提高對餐飲服務品質要求，而提供多樣化產品、高效率與高水準服務品質的連鎖餐飲集團已成為餐飲業界的趨勢，並且在競爭者林立下，餐飲業的服務品質水準不斷在進步，正所謂有競爭才有進步的意識，但是隨著競爭者的增加，餐飲業經營業者除了必須隨時觀察市場趨勢外，更須積極提高自己的競爭力，持續創新經營模式與行銷方式，除保持原顧客的新鮮感，並積極拓展新客群。本文以老四川巴蜀麻辣燙為例，透過相關定義內涵探討與經營現況做介紹，並藉由老四川之經營策略分析與前人研究結果對照之方式，評估企業經營優勢與未來走向，進而提出以下三項實質建議，一、根據企業特色，擬定教育訓練方針；二、將衛生有感化；三、專貢獻社會愛心，響應公益活動等建議，盼能提供老四川巴蜀麻辣燙業者些許經營管理之參考。

Due to the rapid change of Taiwan's life style as long as the enhancement of people's consume ability together with awareness. Therefore, we assume the one of the major trends of catering enterprise in Taiwan is pursuing the total service quality improvement, diversity products combination, high efficient service level, and of course so-called high service quality standard provided. The only way to keep even improve the competiveness of themselves for the players of the catering market in Taiwan which is quite competitive and overall service quality is keep on improving rapidly, the competition is evitable; Thus, the management of Taiwan catering business should keep high attention to the changing of market trend and demand, moreover, should improve the competitiveness aggressively, keep on improving the their business and marketing strategy with creative for the reason to provide freshness to existing customer as long increase number the new customer aggressively. This study take OLDSICHUAN as an example, through the past research of related definition, their current management situations understanding, the analysis of company business strategy, and other existing studies about them to evaluate their advantage and the possible trend of OLDSICHUAN. This study propose three main suggestions to OLDSICHUAN: 1. Make the company professional training and education plan base on their demand and company strategy. 2. Let employees can sense the importance of sanitary. Highlight their social responsibility. 3. Take from society, give back to society. Wish the suggestion listed on the article can support OLDSICHUAN pursue higher target and brighter company future.
