本研究以110學年度上學期餐飲系三年級所開設之創意伴手禮製作實習之修課同學作為研究對象,首先進行前測與後測成對t檢定分析,結果顯示在顯著水準1%下,學習成效每一題項之後測均高於前測,呈現顯著差異。學習成效的認知、態度、技能三構面,後測平均值在顯著水準1%下均顯著高於前測平均值。從整體平均值來分析,後測平均值在顯著水準1%下亦呈現顯著高於前測平均值,顯示本課程經過一學期授課,學習成效顯著大於開學時的學習成效量測,顯示課程教學方式可以有效提升學習成效。採用變異數分析探討學生背景變數對學習成效的影響,結果顯示性別對學習成效之態度構面後測在5%顯著水準下有顯著影響;是否聽過米穀粉製作產品,對於認知構面學習成效在5%顯著水準下有顯著影響。最後透過迴歸分析探討影響學習成效的因素,結果顯示「願意嘗試以米穀粉取代麵粉製作產品」以及學習成效技能構面前測,在5%顯著水準下,會顯著影響學習成效認知、態度與技能三個構面與整體學習成效後測的結果。 |

In this study, taking the students of the rice flour souvenirs course offered by the Third Grade of the Department of Catering in the first semester of the 110th academic year as the research object, the first test and the post-test were paired by t-test analysis, and the results showed that the post-test of learning effectiveness, at a significant level of 1%, was significant higher than the previous test. The Three averages of the post-test of the cognitive, attitude and skill aspects of learning effectiveness, at a significant level of 1%, are significantly higher than the average of the pre-test. From the analysis of the overall average, the average value of the post-test, at a significant level of 1%, is also significantly higher than the average of the pre-test, which shows that the teaching method of the course can effectively improve the learning effect. The influence of students' background variables on learning effectiveness was discussed by using ANOVA analysis, and the results showed that gender had a significant effect at a significant level of 5%, on the post-test of to learning effectiveness. Whether you had heard of rice cereal products, at a significant level of 5%, had a significant impact on the learning effectiveness of cognitive aspect. Finally, the factors affecting learning effectiveness were explored by regression analysis. The results showed that "willing to try to replace flour with rice flour to make products" and the previous test of skills aspect, at a significant level of 5%, will significantly affect the results of the three aspects of learning effectiveness cognition, attitude and skill and the overall learning effectiveness test. |
