作為歷史研究課題的近代上海西餐館,不論在認同、區分、空間構成,亦或是人際禮儀的哪一個層面,都具有嶄新的意義。在上海,十九、廿世紀之交,新出爐的飲食排序當中,「西方人的飲食」顯然位居首位,而提供消費這種餐飲型式的場所,則大有成為人們社交的首選的態勢。在此,西方式的進食空間,又提供了一個展演舞台,西餐館的存在,無疑使得西餐的消費者,得以在其中重審自身與其它人的差別,並重建一套涵蘊社會、文化面相的階級定義。近代上海的西餐館,是一個饒富深度的歷史研究課題。我們當然可以將這個議題,放在美味或時髦的美好氛圍中來進行討論。然而,不可否認的是,襯託這美好畫面的背景,其實並不美好。因為,所有這些西餐館裡烘托美好的事物,其實都擺放在一張「吃飯有不平等」的餐桌上,而各種各樣的衝突、放棄、重整、焦慮則正在這檯面下彼此較勁。 |
英文摘要 |
Contemporary western restaurants in Shànghǎi as a historical research subject have newfangled connotations in all respects of identification, distinction, spacial structure and interpersonal etiquette. Amidst the cuisine rankings in the shift of 19th to 20th century in Shànghǎi, ”western style of diet” scores the very top. Where the style was served serves the preference of social intercourse. The western stylish occasions hold out an atmosphere that distinguishes customers from others and thus defines classification in social and cultural aspects. The subject can be involved in depth in the historical research. The discussion indulged in enjoyment and fashion, however, is not quite wonderful as it seems for all the wonderfulness is set on the table of inequality. Under the table, conflicts, renouncement, reconstruction and anxiety are coming to blows. |
